- 3 lbs chicken pieces (bone-in, thighs, drumsticks and or breasts, skin removed, trimmed)
- 1/2 teaspoon coarse salt, plus a pinch, divided
- 1/2 teaspoon fresh ground pepper
- 7 teaspoons extra virgin olive oil, divided
- 1 tablespoon butter
- 1/2 cup minced shallot
- 16 garlic cloves, peeled
- 1/3 cup sherry wine vinegar or 1/3 cup red wine vinegar
- 1 cup reduced-sodium chicken broth
- 2 sprigs fresh thyme (or 2 teaspoons dried)
- 1/2 cup reduced-fat sour cream
- 1 tablespoon dijon mustard
- 2 teaspoons tomato paste
- 2 teaspoons all-purpose flour
- 2 medium tomatoes, seeded and cut into 1/2-inch pieces
- 2 tablespoons finely minced fresh chives

- 1 pat chicken pieces dry with paper towels and season with 1/2 teaspoon salt and pepper.
- 2 heat 2 teaspoons oil and butter in a large heavy casserole or dutch oven over medium heat. add half the chicken pieces and cook, turning occasionally, until browned on all sides, 5 to 7 minutes. remove to a large plate. add 2 teaspoons oil to the pot. add the remaining chicken and cook, turning occasionally, until browned on all sides, 5 to 7 minutes. remove to the plate.
- 3 heat 2 more teaspoons oil. add shallots and garlic and cook, stirring, until the shallots are soft and lightly browned, about 1 minute. add vinegar and bring to a simmer. return the chicken to the pot. pour in broth and then carefully nestle the thyme sprigs among the chicken pieces (or stir in dry thyme).
- 4 cover the pot with a tight-fitting lid and simmer over medium-low heat until the chicken is very tender, about 50 minutes.

- 1 clean chicken with skin removed.
- 2 in a dutch oven pot heat 2 tbs oil and 2 tbs ghee on medium heat, add cumin seeds.
- 3 wait for the cumin to start to turn color, then add onions, and saute for approx 5 minutes. add garlic and ginger and cook for another 5 minutes or until the onions are browned.
- 4 add tomato paste, chopped tomato, turmeric, garam masala, green chili, and about 1 cup of water.
- 5 cook mixture for approx 5 minutes.

- 7 cover and cook on low to medium-low heat for about 40 minutes or until chicken is tender.
- 8 gravy should not be watery; should be a thicker gravy, like a stew. add coriander for garnish.

- 2 lbs boneless chicken breasts, cut into pieces and lightly pounded flat
- adobo seasoning
- 3/4 cup olive oil
- 1 medium red onion, sliced
- 1 yellow bell pepper, seeded and cut into strips

- 2 oranges, juice of
- 2 limes, juice of
- 2 lemons, juice of
- 3 tablespoons honey (or more to your taste)
- 3 tablespoons capers (to garnish)

- 1 season the chicken with the adobo.
- 2 heat 1/4 cup of the oil in a large skillet and saute the chicken over medium-high heat until lightly browned. let it cool to room temperature on a serving plater.
- 3 in another pan, heat 1/4 cup of the oil and saute the onion, pepper, and garlic until soft.
- 4 add the onion mixture to the chicken.
- 5 combine the juices, remaining 1/4 cup oil, and honey. pour over the chicken and toss. garnish with capers.

- 1 teaspoon garlic powder

- 1 pour margarita mix over chicken breasts, and marinate for 2 hours in refrigerator.

- 3 grill on an outside grill (or george foreman works) 3-4 minutes on each side.
