Easy Green Chile Chicken Bundles

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 4 -6 boneless skinless chicken breasts (pounded flat)
  • 1 cup cheese crackers, crushed
  • 1 1/4 ounces taco seasoning
  • 8 ounces monterey jack pepper cheese
  • 4 -6 whole fresh roasted green chilies (or use canned diced green chile)

Recipe

  • 1 preheat oven to 350.
  • 2 grease baking dish.
  • 3 combine crushed crackers and taco seasoning in a shallow dish(like a pie pan).
  • 4 lay out chicken breasts and place green chile over it(or spread diced green chile to taste). then lay slices of pepper jack cheese on top of green chile.
  • 5 roll up chicken and secure with a toothpick. carefully roll chicken bundles in cracker mix until fully covered.
  • 6 place bundles in baking dish.
  • 7 sprinkle remaining cracker mixture over chicken before baking.
  • 8 bake for 30 minute or until chicken is fully cooked.

  • 1 before going to bed, put chicken in crock pot with 2 cups of water; salt and pepper to taste. set crockpot to low.

  • 1 whole lamb tenderloin
  • 1 teaspoon chili powder
  • 1/2 teaspoon granulated garlic
  • 1/2 teaspoon granulated onion
  • 1 teaspoon garlic salt
  • 1 teaspoon ground cumin
  • 1/4 teaspoon cayenne
  • 2 tablespoons flour
  • 2 garlic cloves, minced (i use 2t refrigerated minced garlic)
  • 1 -2 tablespoon oil
  • 1/2 cup yellow onion, diced
  • 1 (4 ounce) can diced green chilies
  • 1 cup chicken broth (i use an herb-ox packet)
  • 3/4 cup sour cream, at room temperature (full-fat or fat-free)
  • 2 tablespoons water, if needed

Recipe

  • 1 mix together the 5 spices, set aside.
  • 2 trim the silver skin and any excess fat from the tenderloin and pat dry. rub the spice mixture over the surface of the meat. the heat level can be regulated by how heavily the rub is applied. if the entire amount is used it will have just a little heat to it, but it is tempered somewhat by the sour cream in the gravy.
  • 3 spread the flour on a piece of waxed paper or a plate and gently dredge the seasoned meat.
  • 4 heat the oil in a skillet over medium-high heat, add the tenderloin and brown the meat on one side, 2-3 minutes.
  • 5 turn the meat over, add more oil if desired, and add the diced onions and the minced garlic alongside the meat, stirring them occasionally.
  • 6 when the meat is browned (it won't be cooked through), add the diced chiles over and around the meat and pour in the chicken broth.
  • 7 cover, and reduce heat to a simmer.
  • 8 cook for 15-20 minutes, then check for doneness with the meat thermometer, when it reaches 140-145 degrees internally remove the meat to a platter.
  • 9 let meat stand 10 minutes before slicing.
  • 10 meanwhile, stir in the sour cream to the mixture remaining in the skillet until incorporated, to complete the gravy. if the gravy is too thick, stir in the water to thin.
  • 11 serve gravy over meat, rice or pasta, as desired.
  • 12 enjoy.

Ingredients

  • 1 whole chicken
  • 1/4 cup oil
  • 1 tablespoon garlic powder
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 tablespoon paprika

Recipe

  • 1 preheat the oven to 450. remove giblets, neck, liver and any other innards. rinse chicken in cold water and pat dry.
  • 2 place chicken in a foil lined baking dish.
  • 3 coat chicken skin in oil. rub with garlic powder, salt, black pepper and paprika.
  • 4 cook for 20 minutes at 450. lower the oven temperature to 400 and continue to cook for another hour or until the temperature of the chicken reads over 170 with a meat thermometer.
  • 5 remember: do not cover chicken with foil. this will keep the skin from crisping. also the carcass of this chicken makes an excellent chicken soup base!

Chicken Saltimbocca Alla Romana

  • 8 (2 ounce) boneless skinless chicken cutlets, trimmed
  • salt & fresh ground pepper
  • 16 whole fresh sage leaves
  • 8 slices prosciutto di parma
  • 3 tablespoons unsalted butter
  • 2 tablespoons extra virgin olive oil
  • 1/2 cup dry wine

Recipe

  • 1 place chicken cutlet on a cutting board and cover with a sheet of plastic wrap. gently evenly pound the cutlet to 1/4 of an inch thick.
  • 2 season both sides of the cutlets with salt and pepper.
  • 3 place 2 sage leaves on each cutlet and top with prosciutto.
  • 4 cover the cutlets with a sheet of plastic wrap and use the meat mallet to lightly pound each cutlet to adhere the sage and prosciutto to the chicken.
  • 5 heat a large saute pan over medium-high heat.
  • 6 add butter and oil and heat through.
  • 7 place the chicken cutlets in the pan prosciutto-side down and cook until crisp, about 2 minutes.
  • 8 turn the cutlets over and cook until done, about 1 minute more.
  • 9 transfer the cutlets to a platter and tent with aluminum foil.
  • 10 return the pan back to the heat and add the wine, scraping up any browned bits for them bottom.
  • 11 cook until the wine has reduced by half. add the cutlets back to the pan to warm through and coat well with the sauce, serve immediately.

  • 2 in a small bowl melt butter, combine with lemon herb seasoning, minced garlic and cubed brie. toss potatoes in butter mixture. add to crock pot.

  • 4 mix cream of chicken soup with chicken broth. pour over chicken and potatoes.

  • 1 saute onions and garlic with oregano in 1 tablespoons butter in a wide pan. when onions have browned, remove and set aside.
  • 2 rinse chicken and pat dry. split the quarters and sprinkle with tony c's on each side.
  • 3 brown the halved chicken quarters in same pan in two batches, one for the thighs and one for the legs. use 2 tablespoons butter per batch.
  • 4 leaving the excess butter in the pan, put the onions and garlic back in the pan, along with the soups, milk, water and 1 tablespoon liquid smoke and bring to a rapid simmer. whisk while heating, deglazing the pan in the process.

  • 3 note: tapioca is a strange ingredient but it really helps the thickness of this lamb. you need to buy the quick-cooking tapioca that may come in a little red 8 oz box. you would find this by the jello mixes. i would guess that you could use cornstarch or flour instead of tapioca but i haven’t done that before.
