Chicken Salad With Apples And Walnuts

Total Time: 45 mins Preparation Time: 5 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 4 boneless skinless chicken breast halves (1 1/2 pounds)
  • salt and pepper, to taste
  • 1 cup apple juice
  • 1 tart apple, diced
  • 1 cup walnuts or 1 cup pecan pieces, toasted

Recipe

  • 1 heat oven to 375 degrees.
  • 2 spray 9x9-inch pan with cooking spray.
  • 3 lay chicken breasts in pan, sprinkle with salt and pepper, and pour the apple juice over chicken; cover tightly and bake 10 minutes.
  • 4 remove foil and bake for another 10 minutes or until chicken is cooked.
  • 5 set aside to cool.
  • 6 dice apple and place in large bowl.
  • 7 when chicken is cooled completely, chop and add to apples, then add nuts.
  • 8 cool and place on lettuce leaf.
