Creamed Chicken On Cornbread

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • Servings: 8
  • 1 cup yellow cornmeal
  • 1 cup flour
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 1 cup milk
  • 1/4 cup shortening or 1/4 cup butter, melted
  • 2 teaspoons butter
  • 2 1/2 tablespoons flour
  • 1/4 teaspoon nutmeg
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups chicken broth
  • 1 cup milk
  • 3 cups cooked chicken, cubed

Recipe

  • 1 instructions for cornbread: preheat oven to 425f and grease an 8" square pan.
  • 2 mix cornmeal ingredients together until smooth.
  • 3 turn into prepared pan.
  • 4 bake 20 to 25 minutes, or until done.
  • 5 for the chicken, melt butter in saucepan; combine with flour, nutmeg, salt & pepper.
  • 6 stir in broth; add milk & cook until thick.
  • 7 add chicken.
  • 8 serve over squares of corn bread.
