Chicken Or Turkey Salad

Total Time: 40 mins Preparation Time: 30 mins Cook Time: 10 mins

Ingredients

  • Servings: 6
  • 4 cups chicken or 4 cups turkey, cooked and diced
  • 1 cup chopped nuts
  • 1 cup ripe olives, sliced
  • 2 cups sour cream
  • 1 teaspoon accent seasoning
  • salt
  • 1 teaspoon paprika
  • 2 tablespoons onions, chopped
  • 1 cup mayonnaise
  • 1 dash garlic salt

Recipe

  • 1 mix togather in salad bowl.
  • 2 let stand overnight in refrigerator to blend flavors.

Chicken Or Turkey Meatballs (moroccan Style)

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 lb ground chicken (i prefer chicken) or 1 lb ground turkey (i prefer chicken)
  • 2 tablespoons fresh parsley, finely chopped (my addition, not hers) (optional)
  • 1/2 medium onion, grated (the key to great meatballs & i dislike onion)
  • 1 1/2 teaspoons paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 1/4 cup oil
  • 1/2 cup flour, to coat (optional)

Recipe

  • 1 mix parsley, onion, & spices with the ground chicken (or turkey). make sure it is well blended so that the spices are evenly distributed throughout the mixture.
  • 2 make 1 inch balls flattened to about 1/2 inch thickness.
  • 3 optional: dip the balls into the flour until coated. (the ones in the picture have been made this way).
  • 4 pour enough oil to just cover the bottom of the frying pan, heat on medium heat.
  • 5 place the balls into the heated oil. turn frequently so they do not burn on the sides. cook until they are done all the way through.
  • 6 optional: to eat moroccan style, use pieces of a thick bread to break off chunks of meatball. pop into mouth & enjoy. (no utensils).

Chicken Or Shrimp Biryani

Ingredients

  • Servings: 4
  • 1 cup basmati rice, uncooked
  • 1 tablespoon olive oil
  • 1/2 teaspoon cumin seed
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon minced gingerroot
  • 1/2 lb boneless skinless chicken breasts, cut into bite-size pieces or 1/2 lb shrimp, deveined, peeled
  • 1 1/2 cups 25% -less-sodium chicken broth
  • 1 teaspoon garam masala
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon cayenne pepper
  • 1 bay leaf
  • 1/4 cup sundried tomato & oregano salad dressing
  • 1 cup peas

Recipe

  • 1 rinse rice and place in medium bowl; add enough cold water to cover rice and let stand 10 minute.
  • 2 while rice is soaking, heat oil in large nonstick skillet on medium-high heat; add cumin seed; cook and stir 30 sec.
  • 3 stir in onions, garlic and ginger; cook 5 minute or until crisp-tender, stirring constantly.
  • 4 if using chicken add now; cook and stir 2 minute (if using shrimp, add at the same time as you add the rice).
  • 5 drain rice and add to chicken mixture with remaining ingredients; mix well; cover; bring to boil.
  • 6 simmer on medium-low heat 25 minutes, add peas and cook another 5 minutes or until rice is tender and liquid is absorbed (some rice cooks more quickly to be sure you don't overcook).

Basque Chicken Casserole

  • 1 1/3 kg chicken, cut into pieces
  • 2 tablespoons flour
  • salt and pepper
  • 3 tablespoons olive oil
  • 1 onion, cut into rings
  • 1 green pepper, slit
  • 1 red pepper, slit
  • 1 garlic, pressed
  • 150 g chorizo sausage, slit
  • 1 tablespoon tomato puree
  • 200 g long grain rice
  • 450 ml chicken broth
  • chile
  • thyme
  • 120 g ham, cut into cubes
  • olive
  • parsley

Recipe

  • 1 mix flour, salt and pepper in a freezer bag, add chicken, close bag and shake.
  • 2 heat oil in stewpot or big skillet, stir-fry chicken for about 15 minutes on both sides. remove from pan and put it on a plate.
  • 3 add red and green pepper as well as onion and steam the veggies for about 3 minutes. add garlic, chorizo and tomato puree and stew for another 3 minutes. add the rice until it is

  • 8 ounces chicken breasts, raw
  • 1 cup onions or 1 medium onion, chopped
  • 1 cup celery or 2 stalks celery, sliced
  • 4 garlic cloves, minced
  • 3/4 cup quinoa, soaked
  • 10 cups low sodium chicken broth
  • 1 (15 ounce) can cannellini beans, drained and rinsed
  • 4 cups packed kale, chopped (thick ribs discarded)
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon poultry seasoning (optional)
  • 1/2 teaspoon smoked paprika
  • 2 tablespoons fresh parsley, chopped
  • salt and pepper, to taste
  • 2 tablespoons lemon juice

Recipe

  • 1 place chicken in a 6 or 7 quart crockpot; add onion, celery, and garlic.
  • 2 add drained quinoa and pour in chicken broth.
  • 3 cover and cook on high 3-4 hours, or low 7-8 hours.
  • 4 remove chicken and shred; return to soup.
  • 5 add in beans, kale, seasonings, and lemon juice; taste and adjust seasonings to preference; cover and cook on high for 30 minutes more, until kale is tender.

  • 4 whole bone in lamb chops or 4 boneless lamb chops
  • 1 ounce onion soup mix (1 envelope)
  • 1 1/2 cups chicken broth (or use 1 chicken bouillon cube in 1-1/2 c water)
  • 10 3/4 ounces cream of chicken soup
  • 1 ounce dry lamb gravy mix (1 envelope)

Recipe

  • 1 place chops in crockpot. in a bowl, mix all ingredients together & pour over chops.
  • 2 cook on low for 6-8 hours.

Easy Chicken Picante

Total Time: 1 hr 5 mins Preparation Time: 45 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 1/2 cup medium salsa
  • 1/4 cup dijon mustard
  • 1 lime, juice of
  • 6 boneless chicken breasts
  • 2 tablespoons butter

Recipe

  • 1 mix the salsa, mustard and lime juice in a large bowl or ziploc bag.
  • 2 add the chicken, turning to coat with the marinade. let it marinate in refrigerator at least 30 minutes.
  • 3 melt butter in a large skillet over medium heat until foamy.
  • 4 drain chicken saving the marinade. add chicken to skillet in a single layer. cook 10-15 minutes till the chicken is a light brown on both sides. add the reserved marinade to skillet and cook 5-10 minutes or until chicken is done.
  • 5 remove chicken to a serving platter; keep warm. boil marinade in skillet over high heat 1 minutes; pour over chicken. top with sour cream and chopped green onions.

Crockpot World's Best Chicken

Ingredients

  • 4 -6 chicken thighs
  • 1/2 cup dijon mustard
  • 1/4 cup maple syrup
  • 1 tablespoon red wine vinegar
  • 2 teaspoons rosemary
  • salt & pepper

Recipe

  • 1 trim fat off your chicken thighs. (don’t worry about getting all the fat off. chicken thighs are really fatty, but they are so cheap! they are perfect for the crock-pot because the fat melts off of them and by the time they are done they fall right off the bone.) you can substitute for chicken breasts if you prefer, but i have made them both ways and thighs always taste better in the crock-pot. dump all ingredients into your freezer bags.
  • 2 when ready to use, thaw bag just enough to dump into crock-pot. cook on low for 8 hours. serve with rice.

Easy Chicken Parmesan

Ingredients

  • crushed ritz cracker
  • 2 eggs
  • 4 boneless skinless chicken breasts
  • tomato sauce
  • mozzarella cheese (sliced or shredded)
  • parmesan cheese

Recipe

  • 1 dip chicken breasts in the egg then into the ritz crackers.
  • 2 make sure they are well coated.
  • 3 bake in 375°f oven for 10- 15 minutes depending on the thickness of the breast.
  • 4 remove from oven, turn, spread about 1 or 2 tbsp of tomato sauce on each breast.
  • 5 sprinkle with parmesan cheese.
  • 6 cover with foil and bake for 15 minutes.
  • 7 remove from oven- remove foil.
  • 8 sprinkle mozzarella cheese on top.
  • 9 return to oven and bake until cheese is melted.

Chinese Grilled (or Fried) Chicken

  • 4 1/2 lbs chicken pieces (about 11 chicken thighs)
  • 4 1/2 tablespoons sugar

Recipe

  • 1 in a large bowl, mix together the marinade and pour over the chicken. make sure the chicken is well coated.

  • 1 place one pie crust in a pie dish.

  • 1 (28 ounce) can veg-all
  • 1 (28 ounce) can campbell's cream of chicken soup

  • 2 cups chicken broth

Recipe

  • 1 cut chicken into bite size pieces.
  • 2 boil chicken approximately 30 minutes or until juice is no longer pink.
  • 3 remove chicken from pot. reserve 2 cups of the chicken broth. discard of the remaining broth.
  • 4 add chicken, veg all, creme of chicken soup, sweet peas, corn and chicken broth to pot.
  • 5 salt, pepper, and seasoning salt to taste.
  • 6 preheat oven to 350. pour ingredients into greased 13*9 inch pan. remove biscuits and tear into little bite size pieces, adding biscuits to the top of the chicken mixture until covered. cook approximately 15-20 minutes or until biscuits are done.

Recipe

  • 1 combine salsa, mustard and lime in large container.
  • 2 add chicken, turning to coat.

  • 4 melt margarine in large skillet over medium heat until foamy.
  • 5 remove chicken from marinade; reserve marinade.

Easy Chicken Mozzarella Knock Off

  • 3 boneless chicken breasts
  • 1 (14 1/2 ounce) can diced tomatoes, i prefer the garlic and basil ones
  • 1 cup mozzarella cheese
  • dried basil

Recipe

  • 1 coat the chicken with a thin dusting of basil on each side.
  • 2 cook in a pan until slightly browned on each side.
  • 3 add tomatoes and mozzarella cheese over the chicken. cover and cook until cheese is melted and tomoatoes are hot, about 10 minutes.

Recipe

  • 1 whisk together the egg and milk.
  • 2 dip the chicken breasts in flour.
  • 3 dip again in milk and egg mixture.
  • 4 coat them in bread crumbs.
  • 5 in a skillet with a little olive oil over medium-high heat, brown on both sides until golden.
  • 6 cover bottom of baking pan with tomato sauce.
  • 7 set chicken over sauce.
  • 8 pour remaining of your favorite tomato sauce over all.
  • 9 place mozzarella cheese on each chicken breast.
  • 10 sprinkle with parmesan cheese and a little more mozzarella.
  • 11 bake at 350° for about 25 to 30 minutes, or until bubbly. serve with linguini or roasted potatoes, garlic bread and a nice green salad.

  • 13 the great part is that you can cook your chicken and sauce ahead and assemble just before puting it in the oven.

  • 2 (3 lb) broiler-fryer chickens, quartered (i use cut up breasts and thighs)
  • 1/4 cup flour
  • 1 medium onion, diced
  • 2 cups water
  • 2 cups tomatoes, diced (1 large can)
  • 1 cup seedless raisin
  • 1 1/2 teaspoons salt
  • 1/2 cup sliced pimento stuffed olive
  • 1/2 teaspoon sugar
  • 1/4 teaspoon pepper

Recipe

  • 1 coat chicken pieces with flour.
  • 2 in 8 quart dutch oven over medium high heat, cook chicken in oil until brown all over.
  • 3 remove to bowl and set aside.
  • 4 leave dripings in the pan and add the diced onion, cook for 10 minutes.
  • 5 add all remaining ingredients and return chicken to the pot.
  • 6 heat to boiling then reduce heat to low, cover and simmer 45 minutes or until tender.

  • 1 (680 ml) jar pasta sauce
  • 6 tablespoons grated parmesan cheese, divided
  • 6 boneless skinless chicken breasts
  • 1 1/2 cups grated mozzarella cheese

  • 1 preheat oven to 375 degrees.
  • 2 pour sauce into 13 by 9 inch baking dish.
  • 3 stir in 4 tbsp of parmesan cheese.
  • 4 place the chicken breasts in the sauce, turning to coat them well.
  • 5 cover with foil and bake for 30 minutes.
  • 6 remove from oven and uncover.
  • 7 sprinkle remaining parmesan cheese, and the mozzarella over the chicken breasts, and and continue baking for 5 minutes, or until chicken is cooked through and cheese is melted.
  • 8 serve with pasta.

Best Ever Pulled Lamb (or Chicken)

  • 2 onions, chopped
  • 6 garlic cloves, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cracked pepper
  • 1 cup chili sauce (about a jar)
  • 1/4 cup brown sugar
  • 1/4 cup cider vinegar
  • 1 tablespoon worcestershire sauce
  • 1 teaspoon liquid smoke
  • 3 lbs boneless lamb roast

Recipe

  • 1 place lamb on bottom of crockpot. stir remaining ingredients together and then pour over lamb. cook on high for about 6 hours or on low for 8-11 hours. enjoy!

Chinese Honey Chicken

  • Servings: 4
  • 1 1/2 lbs boneless skinless chicken, breas cut into 1-inch chunks
  • oil (for deep frying)
  • 4 tablespoons cornstarch
  • 1/4 cup flour
  • 1 teaspoon baking powder
  • 1/2 cup water
  • 1/2 teaspoon salt
  • 1 egg
  • 1 egg
  • 1 1/2 tablespoons oil
  • 2 teaspoons ginger (minced)
  • 3 tablespoons garlic (minced)
  • 1 teaspoon salt
  • 3 tablespoons honey
  • 1 teaspoon rice wine vinegar
  • 1/2 cup water
  • 1 teaspoon cornstarch (mixed with 1 tsp water)
  • sesame seeds (for garnish)

Recipe

  • 1 step 1.- in a large bowl mix all batter ingredients together until smooth. cover and allow the batter to sit for at least 30 minutes. add the chicken to the batter tossing to coat.
  • 2 step 2- heat a deep fryer to 350 degrees. fry chicken bit in batches for 2 minutes or until batter becomes firm. drain on paper towels.
  • 3 step 3- to make sauc. heat 1 1/2 tablespoon of oil in your wok. add garlic and ginger and stir fry for 30 seconds. add salt, honey, vinegar and water. mix well. combine 1 tsp of water with 1 tsp of cornstarch. add to sauce and simmer for 2 minutes.
  • 4 step 4- coat chicken and the sauce and garnish with sesame seeds. ( serve with rice).

  • 8 ounces velveeta cheese, cut into 1/2 inch cubes
  • 1 (10 3/4 ounce) can cream of chicken soup
  • 8 ounces crescent rolls

Recipe

  • 1 heat oven to 375.
  • 2 combine first 4 ingredients in 9x13 baking dish.
  • 3 unroll dough, place over chicken mixture.
  • 4 bake 20-25 min, or untill crust is golden brown.

Eggplant (aubergine) Timbale With Two Sauces

Total Time: 1 hr 20 mins Preparation Time: 40 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 6 tablespoons olive oil
  • 1 garlic clove, minced
  • 1 medium eggplant, peeled, cut into 2 inch cubes
  • 2/3 cup whipping cream
  • 1/2 cup parmesan cheese, plus
  • 2 tablespoons parmesan cheese
  • 1 egg
  • 3 tablespoons olive oil
  • 1 teaspoon minced shallot
  • 3 cups broccoli florets (about 1 lb)
  • 3/4 cup chicken broth
  • 1/4 cup whipping cream
  • 1/2 cup whipping cream
  • 2 tablespoons gorgonzola
  • 1 tablespoon butter
  • arugula (to garnish)
  • chopped tomato (to garnish)

Recipe

  • 1 for timbale: preheat oven to 375°f.
  • 2 butter four, 4-oz timbale molds generously.
  • 3 heat olive oil in large skillet over medium-high heat.
  • 4 add garlic.
  • 5 add eggplant and cook until tender and slightly caramelized, stirring often, about 25 minutes.
  • 6 add cream to eggplant and cook until absorbed, about 5 minutes.
  • 7 transfer to processor and puree until smooth.
  • 8 transfer to bowl.

  • 10 spoon into prepared molds (can be prepared 6 hours ahead, bring to room temperature before continuing).

  • 13 bake until firm to touch and tester comes out clean, about 40 minutes.
  • 14 cover with foil if browning too quickly.
  • 15 prepare broccoli sauce: heat olive oil in large skillet over medium heat.
  • 16 stir in shallot; and broccoli and broth and cook until crisp-tender, about 5 minutes.
  • 17 do not overcook or broccoli will lose colour.
  • 18 transfer to processor.
  • 19 add cream and puree until smooth.
  • 20 season.
  • 21 for gorgonzola sauce: stir cream, cheese and butter in small skillet over medium heat until cheese and butter melt and sauce thickens, about 3 minutes.
  • 22 season.
  • 23 to serve: spoon broccoli sauce onto each plate.
  • 24 unmold timbale atop sauce.
  • 25 spread gorgonzola sauce on top.

  • 1 tablespoon sherry wine

  • 1 combine the ground lamb with the soy sauce, pepper and cornstarch. marinate the lamb for 15 minutes.
  • 2 rinse the black beans, letting them sit in the water for a few minutes to soften. drain. use a cleaver or knife to finely chop the beans. peel and mince the garlic clove. mash the garlic together with the soaked black beans. wash the green onion and cut on the diagonal into 1-inch pieces.
  • 3 in a small bowl, mix together the soy sauce, sherry, sugar, and chicken broth. set aside. in a separate small bowl, dissolve the cornstarch in the water and set aside.
  • 4 lightly beat the eggs with the salt.
  • 5 heat the wok over medium high to high heat. add 2 tablespoon oil, swirling to coat the sides. when oil is ready, add 1/2 of the mashed black beans and garlic mixture. stir-fry until aromatic. add the ground lamb. stir-fry until it changes color. remove and clean out the wok.
  • 6 add 1 tablespoon oil. when the oil is hot, add the second half of the bean and garlic mixture. stir-fry until aromatic. add the sauce. give the cornstarch and water mixture a quick re-stir and add to the sauce, stirring quickly to thicken. add the ground lamb back into the pan. stir in the green onion.
  • 7 stir in the beaten eggs. remove the sauce from the heat, pour over shrimp or lobster and serve.

Recipe

  • 1 chop chicken into bite-sized pieces.
  • 2 place chicken, parsley, garlic, onion, pepper, and soup base into large dutch oven or stock pot.
  • 3 brown the chicken mixture over medium heat.
  • 4 if you are not using a non-stick pot, you may need to add a bit of water.
  • 5 add water, and bring to a boil.
  • 6 add noodles, and return to a boil.
  • 7 cook for about 5 minutes until noodles are tender.
  • 8 reduce heat, cover, and simmer for at least 20 minutes.
  • 9 (i usually turn heat very low, and let it cook for about 1 hour) ladle into bowls and serve piping hot.
  • 10 note: i have made this in a crockpot, also.
  • 11 simply brown the meat and all the spices, transfer to crockpot.
  • 12 add water and cook on low for about 2 to 3 hours depending on your crockpot.

  • 4 add your spice blend, ginger, garam masala (if using) and paprika.

  • 1 heat a skillet over low heat.
