Blueberry Soy Chicken Breasts

Ingredients

  • Servings: 4
  • 4 boneless skinless chicken breast halves (about 2 pounds)
  • olive oil, for brushing on chicken
  • salt
  • fresh ground black pepper
  • 2 cups blueberries (fresh or frozen)
  • 1/4 cup sugar
  • 2 teaspoons soy sauce
  • 2 tablespoons water
  • 2 teaspoons cornstarch
  • 1/2 teaspoon grated lemon zest
  • 1/8 teaspoon ground cloves

Recipe

  • 1 preheat the oven to 350 degrees.
  • 2 place the chicken breasts in a lightly sprayed or oiled 11 x 7 inch glass baking dish.
