Blueberry Soy Chicken Breasts

Ingredients

- 4 boneless skinless chicken breast halves (about 2 pounds)
- olive oil, for brushing on chicken
- salt
- fresh ground black pepper
- 2 cups blueberries (fresh or frozen)
- 1/4 cup sugar
- 2 teaspoons soy sauce
- 2 tablespoons water
- 2 teaspoons cornstarch
- 1/2 teaspoon grated lemon zest
- 1/8 teaspoon ground cloves
Recipe
- 1 preheat the oven to 350 degrees.
- 2 place the chicken breasts in a lightly sprayed or oiled 11 x 7 inch glass baking dish.
- 3 brush with oil and season with salt and pepper to taste.
- 4 bake, uncovered, for 10 minutes.
- 5 make the sauce: in a saucepan over medium heat, combine all the sauce ingredients; cook, stirring constantly, until thickened, 1-2 minutes.
