Easy Chicken

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 2 1/2 tablespoons butter or 2 1/2 tablespoons margarine
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1/2 tablespoon dried thyme
  • 3 tablespoons dry wine or 3 tablespoons grape juice
  • 1/2 cup cream of chicken soup
  • 1/2 cup half-and-half
  • 4 boneless chicken breast halves
  • salt and pepper

Recipe

  • 1 melt 1 tablespoon butter with oil in saucepan over medium heat.
  • 2 add onion and thyme and sauté 4 minutes or until onion is soft.
  • 3 add wine or grape juice and cook until reduced by half (5-10 minutes).
  • 4 add soup and half and half and stir until heated (5 minutes).
  • 5 while sauce is cooking, melt remaining 1 1/2 tablespoons butter in skillet over medium high heat.
  • 6 add chicken to skillet and cook until done about 7-10 minutes, turning occasionally.
  • 7 spoon sauce over chicken.
