Crock Pot Chicken Chili

Ingredients

- 1 1/2 lbs boneless skinless chicken breasts, cut into 1/2-inch
- 1 cup chopped onion, diced
- 3 tablespoons vegetable oil
- 1 (15 ounce) can cannellini beans or 1 (15 ounce) can kidney beans, rinsed and drained
- 1 (14 1/2 ounce) can diced tomatoes, undrained
- 1 (14 1/2 ounce) can diced tomatoes with mild green chilies, undrained
- 1 cup frozen corn
- 1 teaspoon salt (to taste)
- 1 teaspoon ground cumin
- 1 teaspoon minced garlic
- 1/2 teaspoon celery salt
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground black pepper
Recipe
- 1 in a large skillet, saute' chicken and onion in oil for 5 minutes or until the chicken is browned.
- 2 transfer to a 5-qt. crock pot/slow cooker.
- 3 stir in the beans, tomatoes, corn and seasonings.
- 4 cover and cook on low heat setting for 5 hours or until the chicken is no longer pink.
- 5 garnish with sour cream and cheese, if desired.
