Crock Pot Chicken Chili

Total Time: 5 hrs 15 mins Preparation Time: 15 mins Cook Time: 5 hrs

Ingredients

  • Servings: 6
  • 1 1/2 lbs boneless skinless chicken breasts, cut into 1/2-inch
  • 1 cup chopped onion, diced
  • 3 tablespoons vegetable oil
  • 1 (15 ounce) can cannellini beans or 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (14 1/2 ounce) can diced tomatoes, undrained
  • 1 (14 1/2 ounce) can diced tomatoes with mild green chilies, undrained
  • 1 cup frozen corn
  • 1 teaspoon salt (to taste)
  • 1 teaspoon ground cumin
  • 1 teaspoon minced garlic
  • 1/2 teaspoon celery salt
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground black pepper

Recipe

  • 1 in a large skillet, saute' chicken and onion in oil for 5 minutes or until the chicken is browned.
  • 2 transfer to a 5-qt. crock pot/slow cooker.
  • 3 stir in the beans, tomatoes, corn and seasonings.
  • 4 cover and cook on low heat setting for 5 hours or until the chicken is no longer pink.
  • 5 garnish with sour cream and cheese, if desired.
