Chicken Salad Wraps (atkins)

Ingredients

  • Servings: 2
  • 1 lb poached chicken breast
  • 1 celery rib, chopped
  • 3 tablespoons mayonnaise
  • 1 teaspoon dijon mustard
  • 1 tablespoon chopped fresh parsley
  • 3 large lettuce leaves
  • 1/2 teaspoon finely chopped chipotle chile in adobo (optional,for a spicier version)

Recipe

  • 1 cut chicken into 1/2 cubes. mix celery, mayonnaise, mustard, and parsley in a bowl. add chicken; toss to coat.
  • 2 wrap in large lettuce leaves.
