Ingredients

- 1 lb poached chicken breast
- 1 celery rib, chopped
- 3 tablespoons mayonnaise
- 1 teaspoon dijon mustard
- 1 tablespoon chopped fresh parsley
- 3 large lettuce leaves
- 1/2 teaspoon finely chopped chipotle chile in adobo (optional,for a spicier version)
Recipe
- 1 cut chicken into 1/2 cubes. mix celery, mayonnaise, mustard, and parsley in a bowl. add chicken; toss to coat.
- 2 wrap in large lettuce leaves.
