Bean And Sausage Stew

Ingredients
- 3 cups great northern beans, soaked 8 hours to overnight
- 1 large onion, diced
- 4 garlic cloves, minced
- 2 lemons, juiced
- 2 1/2 tablespoons olive oil
- 2 teaspoons fresh thyme, chopped
- 4 cups chicken broth
- 16 ounces kielbasa, sliced
- 1 teaspoon cumin
- 1 teaspoon dried oregano
- 2 basil leaves, cut in thin ribbons
- salt and pepper, to taste
Recipe
- 1 heat a dutch oven over medium heat.
- 2 add olive oil, then add onion and garlic. saute until soft.
- 3 remove onions and garlic, add kielbasa and evenly brown.
- 4 add all remaining ingredients to the pot and simmer for at least 2 hours, stirring frequently.
