- 3 tablespoons cornmeal
- 1 tablespoon flour
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon oregano leaves
- 1/2 teaspoon salt (to taste)
- cayenne pepper
- 4 boneless skinless chicken breast halves
- 1 tablespoon vegetable oil
Recipe
- 1 combine the cornmeal, flour, chili powder, cumin, oregano, salt and cayenne in a shallow dish.
- 2 press chicken into mixture to coat all over. heat the oil in a nonstick skillet over medium heat until hot and cook the chicken, turning once, until it is no longer pink inside, 10-15 minutes.
