Crunchy Chili Chicken

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 3 tablespoons cornmeal
  • 1 tablespoon flour
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon oregano leaves
  • 1/2 teaspoon salt (to taste)
  • cayenne pepper
  • 4 boneless skinless chicken breast halves
  • 1 tablespoon vegetable oil

Recipe

  • 1 combine the cornmeal, flour, chili powder, cumin, oregano, salt and cayenne in a shallow dish.
  • 2 press chicken into mixture to coat all over. heat the oil in a nonstick skillet over medium heat until hot and cook the chicken, turning once, until it is no longer pink inside, 10-15 minutes.
