Cashew Chicken

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 6
  • 3 whole chicken breasts
  • salt and pepper
  • 1/2 lb snow peas
  • 1/2 lb broccoli
  • 2 -4 green onions
  • 1 (15 ounce) can bamboo shoots
  • 1 cup chicken broth
  • 1/4 cup soy sauce
  • 2 tablespoons cornstarch
  • 1/2 teaspoon sugar
  • 1 teaspoon hot chili sauce
  • 1/4 cup salad oil or 1/4 cup sesame oil
  • 1 (4 ounce) package cashews

Recipe

  • 1 1. slice chicken into 1" squares add salt and pepper to taste . chop green onions.
  • 2 2.pour chicken broth into a small bowl and mix togeher with soy sauce,cornstarch,sugar and chili sauce.
  • 3 to cook.
  • 4 1. heat 1 tblsp. of oil over med heat and add nuts,shake pan until toasted. remove and set aside.
  • 5 2. add remaining oil to pan and add chicken cook quickly remove and set aside.
  • 6 3. add veggies saute till start to color. add broth mixture then chicken bring to boil and let simmer for 2 to 4 minutes or until veggies are cooked. add bamboo shoots and stir until sauce thickens. mix in green onions and nuts.
  • 7 serve over steamed rice.
