Cashew Chicken

Ingredients

- 3 whole chicken breasts
- salt and pepper
- 1/2 lb snow peas
- 1/2 lb broccoli
- 2 -4 green onions
- 1 (15 ounce) can bamboo shoots
- 1 cup chicken broth
- 1/4 cup soy sauce
- 2 tablespoons cornstarch
- 1/2 teaspoon sugar
- 1 teaspoon hot chili sauce
- 1/4 cup salad oil or 1/4 cup sesame oil
- 1 (4 ounce) package cashews
Recipe
- 1 1. slice chicken into 1" squares add salt and pepper to taste . chop green onions.
- 2 2.pour chicken broth into a small bowl and mix togeher with soy sauce,cornstarch,sugar and chili sauce.
- 3 to cook.
- 4 1. heat 1 tblsp. of oil over med heat and add nuts,shake pan until toasted. remove and set aside.
- 5 2. add remaining oil to pan and add chicken cook quickly remove and set aside.
- 6 3. add veggies saute till start to color. add broth mixture then chicken bring to boil and let simmer for 2 to 4 minutes or until veggies are cooked. add bamboo shoots and stir until sauce thickens. mix in green onions and nuts.
- 7 serve over steamed rice.
