Easiest Roast Chicken Ever

Ingredients
- 1 whole chicken
- 3 garlic cloves
- 1 lemon, zest of
- 2 rosemary sprigs
- salt, to taste
- pepper, to taste
Recipe
- 1 preheat oven to 425 degrees. place chicken on a rack in a roasting pan or cast-iron skillet.
- 2 in a blender or food processor, combine garlic, lemon zest, and rosemary. spread puree under the skin of the chicken.
- 3 sprinkle generously with salt and pepper.
- 4 cook the chicken for 15 minutes for each pound, plus 15 minutes (i.e., a 3-lb bird: 15 minutes x 3 + 15 minutes = 60 minutes).
- 5 chicken is done when juices run clear when pricked with a fork.
