Easy And Light Chicken Piccata

Ingredients

- 6 boneless skinless chicken breasts
- 1/3 cup flour, seasoned with
- salt and pepper, if you choose
- 1/4 cup extra virgin olive oil
- 2 garlic cloves, minced
- 1/2 cup onion, chopped
- 1 cup chicken broth
- 2 tablespoons dried parsley
- fresh parsley, for garnish
- 1 lemon, sliced
Recipe
- 1 prepare flour with salt and pepper if desired.
- 2 in a large skillet or electric frying pan, heat oil.
- 3 dredge chicken in flour and lightly brown in oil, with the onion and garlic.
- 4 cook on low and do not let the garlic get too brown.
- 5 drain off any oil.
- 6 add chicken broth and dried parsley.
- 7 simmer for 5 - 10 minutes.
- 8 this will thicken in it''s own juices.
- 9 just before serving, add lemon slices to each piece of chicken and cover for 1 minute.
- 10 remove immediately and serve over rice or pasta.
- 11 for more lemon flavor, squeeze lemon into gravy while simmering for the one minute.
