Easy, Simple Chipotle Chicken And Rice

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 3
  • 6 -8 chicken tenderloins
  • 1/2 cup chopped onion
  • cooking spray
  • 1 cup long-grain rice
  • 1 (14 1/2 ounce) can petite diced tomatoes with chipotle peppers, drained
  • reserved tomato juice
  • water, to make 2 cups liquid

Recipe

  • 1 drain juice from tomatoes into 2-cup measure. add water to make 2 cups of juice/water. set aside, along with tomatoes.
  • 2 spray 10-12 inch skillet with cooking spray. heat over high heat about 1 minute. add chicken and onions. reduce heat to med-high and cook about 5 minutes til lightly browned, turning chicken to brown both sides and stirring onions.
  • 3 add rice, juice/water mixture and tomatoes to skillet. bring to a boil, stir, cover and reduce heat to low. cook 14 minutes. stir and serve.
