Easy Tomato Soup

Ingredients

- 2 (14 1/2 ounce) cans seasoned diced tomatoes (i use roasted garlic)
- 2 cups tomato juice
- 1 (14 1/2 ounce) can chicken broth
- 1 cup heavy cream or 1 cup fat-free half-and-half
- 1/2 cup unsalted butter (optional)
Recipe
- 1 puree cans of diced tomatoes in blender or food processor.
- 2 (optional).
- 3 in a large saucepan combine tomatoes, juice, and broth.
- 4 bring to a simmer and simmer for 15 minutes.
- 5 turn off heat and add cream and butter.
- 6 stirring thoroughly to melt butter.
- 7 serve.
