Cashew Broccoli Slaw

Ingredients

  • Servings: 6
  • 1 (12 ounce) bag broccoli, slaw
  • 1 (4 ounce) can pineapple tidbits
  • 1 red bell pepper
  • 1 cup whole cashews
  • 1/2 cup poppy seed dressing

Recipe

  • 1 chop the red pepper into two inch strips. reserving about 1 tbsp of juice, drain canned pineapple. mix juice and dressing. toss with slaw, pineapple, and red pepper. add cashews just before serving.
  • 2 add grilled chicken if desired for a main dish. raspberries or strawberries are great with this, too.
