Cashew Broccoli Slaw

Ingredients

- 1 (12 ounce) bag broccoli, slaw
- 1 (4 ounce) can pineapple tidbits
- 1 red bell pepper
- 1 cup whole cashews
- 1/2 cup poppy seed dressing
Recipe
- 1 chop the red pepper into two inch strips. reserving about 1 tbsp of juice, drain canned pineapple. mix juice and dressing. toss with slaw, pineapple, and red pepper. add cashews just before serving.
- 2 add grilled chicken if desired for a main dish. raspberries or strawberries are great with this, too.
