Easy 'n Elegant Chicken With Lime Butter

Ingredients

- 2 boneless, skinless chicken breasts
- salt and pepper
- 1/2 lime, juice of (juice the other half & freeze for later use)
- 2 tablespoons butter (no substitutes)
- 1/4 teaspoon chives, minced (fresh or freeze-dried)
- 1/4 teaspoon dill weed
Recipe
- 1 sprinkle chicken with salt and pepper.
- 2 spray large non-stick skillet with cooking spray, or lightly brush with oil.
- 3 place on stove over medium heat, and add chicken.
- 4 cook about 4 minutes or until lightly brown on the bottom.
- 5 turn chicken, cover and reduce heat to low.
- 6 cook about 10 minutes or until fork can be inserted in chicken easily.
- 7 remove chicken to warmed serving dish.
- 8 drain off pan juices (save for another use if desired) and wipe pan.
- 9 over low heat, add lime juice to pan and cook until juice begins to bubble.
- 10 add butter, cut into chunks, and stir until butter becomes opaque and forms a thickened sauce.
- 11 stir in chives and dill weed.
- 12 spoon over chicken and serve immediately.
