Ingredients
- 1/2 cup kosher salt
- 2/3 cup sugar
- 1 tablespoon peppercorn
- 1 tablespoon rosemary
- 1 tablespoon mustard seeds
- 1/2 teaspoon celery seed
- 4 tablespoons dried onion
- 3/4 gallon water
Recipe
- 1 mix all the above in large pot and bring to quick boil to dissolve salt and sugar. let cool completely.
- 2 pour over your chicken or lamb in covered bowl and let soak for 4-6 hours.
- 3 drain, pat meat dry with paper towel and prepare as you prefer.
