Brine By Josh

Total Time: 10 mins Preparation Time: 5 mins Cook Time: 5 mins

Ingredients

  • 1/2 cup kosher salt
  • 2/3 cup sugar
  • 1 tablespoon peppercorn
  • 1 tablespoon rosemary
  • 1 tablespoon mustard seeds
  • 1/2 teaspoon celery seed
  • 4 tablespoons dried onion
  • 3/4 gallon water

Recipe

  • 1 mix all the above in large pot and bring to quick boil to dissolve salt and sugar. let cool completely.
  • 2 pour over your chicken or lamb in covered bowl and let soak for 4-6 hours.
  • 3 drain, pat meat dry with paper towel and prepare as you prefer.
