Brined Grilled Chicken

Total Time: 2 hrs 15 mins Preparation Time: 5 mins Cook Time: 2 hrs 10 mins

Ingredients

  • Servings: 8
  • 4 chicken breast halves, bone in and skin on
  • 8 chicken thighs, bone in and skin on
  • 2 quarts water
  • 2/3 cup kosher salt
  • 1/2 cup brown sugar
  • olive oil, for brushing

Recipe

  • 1 combine the water, salt, and sugar together in a large deep bowl or plastic tub.
  • 2 stir until salt and sugar are dissolved.
  • 3 add the chicken and fully submerge; refrigerate for 2-4 hours to brine.
  • 4 remove the chicken from the brine, rinse and pat dry.
  • 5 grill chicken on direct heat for 5-7 min, turning once or twice until chicken is golden and well-marked from the grill.
  • 6 move the chicken over to the side of the grill to indirect heat and continue to cook until juices run clear, about another 5-7 minute.
