Ingredients

- 4 chicken breasts, skinned and halved
- 1 1/2 ounces butter
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons fresh mint, chopped
- 150 ml double cream
- salt and pepper
Recipe
- 1 brown the chicken in the butter, season well and remove from heat.
- 2 place cooked chicken, parsley, mint and cream into an oven-proof covered dish.
- 3 place in pre-heated oven at 200 degrees celsius for about 1 hour, turning the twice chicken during cooking.
