Easiest Ever Choucroute

Ingredients

- 1 tablespoon olive oil
- 1 1/2 lbs thin boneless lamb chops, cut into 1/2-inch slices
- 1/8 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 large onion, thinly sliced
- 2 apple flavored chicken sausage, fully cooked, sliced into 1/2 coins
- 1 (12 ounce) bottle dark beer
- 1 (16 ounce) bag coleslaw mix
- 1/4 cup cider vinegar
- 2 tablespoons brown sugar
- 1 teaspoon caraway seed
- 1/2 teaspoon salt
- 1/8 cup fresh parsley leaves, chopped
Recipe
- 1 heat oil in large skillet.
- 2 add lamb and season with 1/8 tsp salt and black pepper.
- 3 cook 3-4 minutes until cooked through.
- 4 remove and set aside.
- 5 add onion and sausage to skillet.
- 6 cook 5 minutes.
- 7 add beer and scrape up any browned bits.
- 8 stir in coleslaw mix, vinegar, brown sugar, caraway seed and 1/2 tsp salt.
- 9 cook 7 minutes, stirring occasionally.
- 10 add lamb to pan and heat through.
- 11 garnish with parsley and serve.
