Easiest Ever Choucroute

Total Time: 31 mins Preparation Time: 15 mins Cook Time: 16 mins

Ingredients

  • Servings: 4
  • 1 tablespoon olive oil
  • 1 1/2 lbs thin boneless lamb chops, cut into 1/2-inch slices
  • 1/8 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 large onion, thinly sliced
  • 2 apple flavored chicken sausage, fully cooked, sliced into 1/2 coins
  • 1 (12 ounce) bottle dark beer
  • 1 (16 ounce) bag coleslaw mix
  • 1/4 cup cider vinegar
  • 2 tablespoons brown sugar
  • 1 teaspoon caraway seed
  • 1/2 teaspoon salt
  • 1/8 cup fresh parsley leaves, chopped

Recipe

  • 1 heat oil in large skillet.
  • 2 add lamb and season with 1/8 tsp salt and black pepper.
  • 3 cook 3-4 minutes until cooked through.
  • 4 remove and set aside.
  • 5 add onion and sausage to skillet.
  • 6 cook 5 minutes.
  • 7 add beer and scrape up any browned bits.
  • 8 stir in coleslaw mix, vinegar, brown sugar, caraway seed and 1/2 tsp salt.
  • 9 cook 7 minutes, stirring occasionally.
  • 10 add lamb to pan and heat through.
  • 11 garnish with parsley and serve.
