Chicken Black-eyed Peas Casserole

Total Time: 50 mins Preparation Time: 5 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 4 -6 boneless skinless chicken breasts
  • 2 (15 1/2 ounce) cans black-eyed peas
  • 1/2 cup sliced onion (and or garlic)
  • all purpose greek seasoning
  • 8 ounces smoked sausage, sliced

Recipe

  • 1 season chicken with greek seasoning or salt and pepper. place in baking dish layered with onions.
  • 2 pour over the undrained blackeye peas and sliced smoked sausage.
  • 3 sprinkle again with greek seasoning and more onion if desired.
  • 4 bake, covered at 350 degrees for 45 minutes or longer.
  • 5 note: the smoked sausage is optional.
