Creole Shrimp And Sausage Stew

Ingredients
- 2 teaspoons olive oil
- 1 cup green bell pepper, chopped
- 1 cup smoked sausage, sliced thin
- 1 teaspoon garlic, minced
- 3/4 cup chicken broth
- 1 (10 ounce) can diced tomatoes with green chilies (rotel)
- 8 ounces medium shrimp, peeled and deveined
- 1 (15 ounce) can kidney beans, rinsed and drained
- 2 tablespoons parsley, chopped
Recipe
- 1 heat a large saucepan over medium-high heat. add oil to pan; swirl to coat.
- 2 add bell pepper, sausage and garlic to pan; saute 3 minutes or until bell pepper is tender, stirring occasionally.
- 3 add broth and tomatoes; bring to a boil.
- 4 stir in shrimp and beans; cover, reduce heat, and simmer 6 minutes or until shrimp are done.
- 5 sprinkle with parsley.
