Easy Lamb Meatball And Bean Crock Pot Soup

Ingredients

  • Servings: 4
  • 1 lb ground lamb
  • 1/2 teaspoon salt
  • 1 teaspoon ground cumin
  • 1 garlic clove, minced
  • 1/4 cup onion, chopped
  • 2 cups chicken broth
  • 1 (15 ounce) can low-sodium tomatoes, drained diced
  • 1 (15 ounce) can garbanzo beans or 1 (15 ounce) can black-eyed peas, drained
  • 1 (10 ounce) package frozen chopped broccoli
  • 1/2 teaspoon dried thyme leaves, crushed
  • salt and black pepper

Recipe

  • 1 in medium bowl, combine lamb, onion, garlic, cumin, and salt; mix lightly.
  • 2 shape into 1-inch balls.
