Easy Leftover Mashed Potato Soup

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • 1 tablespoon butter
  • 1 tablespoon minced onion
  • 1 cup mashed potatoes
  • 2 cups milk
  • 1 cup chicken broth
  • 1/2 teaspoon worcestershire sauce
  • 1/2 teaspoon salt
  • 1 dash pepper
  • 1 pinch dried parsley

Recipe

  • 1 melt butter over medium-low heat in a pot large enough to hold the soup.
  • 2 add the minced onions and saute for a 3-4 minutes until the onions are soft and translucent.
  • 3 add the remaining ingredients and simmer for about 10 minutes stirring occasionally.
  • 4 the soup will keep for a day or two in the fridge.
