Easy Leftover Mashed Potato Soup

Ingredients
- 1 tablespoon butter
- 1 tablespoon minced onion
- 1 cup mashed potatoes
- 2 cups milk
- 1 cup chicken broth
- 1/2 teaspoon worcestershire sauce
- 1/2 teaspoon salt
- 1 dash pepper
- 1 pinch dried parsley
Recipe
- 1 melt butter over medium-low heat in a pot large enough to hold the soup.
- 2 add the minced onions and saute for a 3-4 minutes until the onions are soft and translucent.
- 3 add the remaining ingredients and simmer for about 10 minutes stirring occasionally.
- 4 the soup will keep for a day or two in the fridge.
