Chili Beans

Ingredients

- 1 lb dry red kidney beans
- 1 medium onion, chopped
- 2 -4 garlic cloves, finely chopped
- 1/4 lb bacon, chopped
- 1 tablespoon chili powder, to taste
- salt & freshly ground black pepper
- 1 cup red wine or 1 cup chicken broth
- 3 cups chicken broth
- 1 (16 ounce) can chopped tomatoes
Recipe
- 1 soak the beans in water overnight.
- 2 drain and combine with the remaining ingredients in a large pot.
- 3 bring to a boil and reduce the heat to low.
- 4 simmer covered for 4 hours, or until the beans are tender and the sauce has thickened, adding more chicken broth if necessary.
