Crusty Cashew Chicken

Total Time: 1 hr 30 mins Preparation Time: 20 mins Cook Time: 1 hr 10 mins

Ingredients

  • Servings: 4
  • 1/2 cup butter or 1/2 cup margarine
  • 1 cup buttermilk
  • 1 egg, beaten
  • 1 1/2 cups ground unsalted cashews (use food processor fitted with steel blade)
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 6 chicken breast halves

Recipe

  • 1 preheat oven to 350°f.
  • 2 place butter in a roasting pan and melt in the oven for 4 to 5 minutes.
  • 3 remove from oven and set aside.
  • 4 in a shallow dish, whisk together the buttermilk and egg.
  • 5 in another shallow dish, combine the ground cashews, flour, and salt.
  • 6 dip chicken pieces in buttermilk mixture, then coat with the cashew mixture.
