Crusty Cashew Chicken

Ingredients

- 1/2 cup butter or 1/2 cup margarine
- 1 cup buttermilk
- 1 egg, beaten
- 1 1/2 cups ground unsalted cashews (use food processor fitted with steel blade)
- 1/2 cup all-purpose flour
- 1 teaspoon salt
- 6 chicken breast halves
Recipe
- 1 preheat oven to 350°f.
- 2 place butter in a roasting pan and melt in the oven for 4 to 5 minutes.
- 3 remove from oven and set aside.
- 4 in a shallow dish, whisk together the buttermilk and egg.
- 5 in another shallow dish, combine the ground cashews, flour, and salt.
- 6 dip chicken pieces in buttermilk mixture, then coat with the cashew mixture.
- 7 place chicken in roasting pan, turning to coat with melted butter.
- 8 bake uncovered, for 1 hour and 10 minutes or until chicken becomes golden brown.
