Easy Peesy Chicken Cordon Bleu

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • 2 lbs boneless skinless chicken breasts or 2 lbs chicken thighs
  • 6 slices baby swiss cheese
  • 6 slices ham (whatever ham you like best, thinly sliced)
  • 1 (5 1/2 ounce) package shake-n-bake
  • 1 (10 3/4 ounce) cream of chicken soup
  • 1/4 cup cream (you can use more or less cream is you want) or 1/4 cup milk (you can use more or less cream is you want)

Recipe

  • 1 lay your chicken out on a piece of plastic wrap and cover chicken with another piece of plastic wrap.
  • 2 pound chicken with a mallet (i use a rolling pin) until you get equal thickness(about 1/4 inch) through out.
  • 3 place 1 slice of ham and 1 slice of swiss in each breast or thigh and roll. you can use toothpicks to hold if you want. but the rolls should hold when they start to cook.
  • 4 pour shake n' bake in a plate and roll chicken in it.
  • 5 now place chicken in a greased 9x13 inch casserole dish.
  • 6 cook in a 400* f oven for about 30 minutes. adjust cook time according to your oven. chicken must reach an internal temperature of 165* f.
  • 7 while chicken is cooking, pour cream of chicken soup into saucepan. add as much milk or cream as you like (some times i don't use any) and simmer on medium heat stirring frequently until warm.
  • 8 when you think chicken is mostly done, remove from oven, pour cream of chicken soup over each piece of chicken and return to oven for 15 min or until bubbly and lightly browned on top.
  • 9 enjoy. :).
