Easy Chicken And Dumplings

Ingredients

- 4 boneless skinless chicken breasts
- 1 (4 1/2 ounce) can refrigerated buttermilk biscuits
- 1 (14 ounce) can reduced-sodium chicken broth
- 1 small onion, chopped
- 1/3 cup celery, chopped
- 2 tablespoons flour
- 1 (12 ounce) jar 98% fat free chicken gravy
- 1 cup fat-free half-and-half or 1 cup milk
- 1/2 cup frozen peas (optional)
- 1 bay leaf
- 1/4 teaspoon pepper
Recipe
- 1 cut chicken into 1/2-inch pieces.
- 2 flatten each biscuit to 1/8-inch thick and cut each into 6 pieces.
- 3 spray large, deep nonstick pot with nonstick cooking spray.
- 4 heat over medium-high.
- 5 add chicken, onion and celery.
- 6 cook and stir 6 to 8 minutes or until celery is tender.
- 7 blend flour into chicken broth.
- 8 stir broth and remaining ingredients, except biscuits, into chicken mixture.
- 9 bring to a boil.
- 10 add biscuit pieces to chicken mixture.
- 11 cover tightly.
- 12 reduce heat to medium-low.
- 13 cook 10 to 15 minutes or until dumplings are fully cooked, broth is thickened and chicken is done.
- 14 remove and discard bay leaf.
- 15 ladle chicken and dumplings into individual serving bowls.
- 16 refrigerate leftovers.
