Easy Chicken And Dumplings

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 4 boneless skinless chicken breasts
  • 1 (4 1/2 ounce) can refrigerated buttermilk biscuits
  • 1 (14 ounce) can reduced-sodium chicken broth
  • 1 small onion, chopped
  • 1/3 cup celery, chopped
  • 2 tablespoons flour
  • 1 (12 ounce) jar 98% fat free chicken gravy
  • 1 cup fat-free half-and-half or 1 cup milk
  • 1/2 cup frozen peas (optional)
  • 1 bay leaf
  • 1/4 teaspoon pepper

Recipe

  • 1 cut chicken into 1/2-inch pieces.
  • 2 flatten each biscuit to 1/8-inch thick and cut each into 6 pieces.
  • 3 spray large, deep nonstick pot with nonstick cooking spray.
  • 4 heat over medium-high.
  • 5 add chicken, onion and celery.
  • 6 cook and stir 6 to 8 minutes or until celery is tender.
  • 7 blend flour into chicken broth.
  • 8 stir broth and remaining ingredients, except biscuits, into chicken mixture.
  • 9 bring to a boil.
  • 10 add biscuit pieces to chicken mixture.
  • 11 cover tightly.
  • 12 reduce heat to medium-low.
  • 13 cook 10 to 15 minutes or until dumplings are fully cooked, broth is thickened and chicken is done.
  • 14 remove and discard bay leaf.
  • 15 ladle chicken and dumplings into individual serving bowls.
  • 16 refrigerate leftovers.
