Easy Pressure Cooker Yam Puree

Total Time: 13 mins Preparation Time: 5 mins Cook Time: 8 mins

Ingredients

  • Servings: 4
  • 1 cup orange juice (fresh is best)
  • 1 orange, zest of
  • 1 teaspoon chicken bouillon concentrate (i use reduced sodium better than bouillon)
  • 1 tablespoon butter
  • 2 medium yams

Recipe

  • 1 peel and roughly chop the yams.
  • 2 place all ingredients in the pressure cooker.
  • 3 put the lid on and seal it.
  • 4 bring to full pressure over high heat then reduce heat to minimum required to maintain pressure and cook for 8 minutes.
  • 5 depressurize under cold running water.
  • 6 puree with stick blender.
  • 7 adjust salt and pepper to taste.
