Black Pepper Lime Chicken

Total Time: 1 hr 5 mins Preparation Time: 20 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 2 1/2-3 lbs meaty chicken pieces
  • 1 teaspoon finely shredded lime peel
  • 1/4 cup lime juice
  • 1 tablespoon cooking oil
  • 2 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1/2-1 teaspoon black pepper
  • 1/4 teaspoon salt

Recipe

  • 1 place chicken pieces,bone side up on the unheated rack of a broiler pan.
  • 2 broil 4-5 inches from heat about 20 minutes or until light brown.
  • 3 meanwhile for glaze,in a small bowl stir together lime peel,lime juice,oil,garlic,thyme, pepper and salt.
  • 4 brush chciken with glaze.
  • 5 turn chicken brush with more glaze.
  • 6 broil 5-15 minutes more until chicken is no longer pink.
