Creole Chicken Soup

Total Time: 10 hrs 20 mins Preparation Time: 20 mins Cook Time: 10 hrs

Ingredients

  • Servings: 8
  • 2 lbs boneless skinless chicken thighs
  • 1/2 lb low-fat kielbasa
  • 1 1/2 cups okra, sliced (fresh or frozen)
  • 1 large onion, chopped
  • 1 large sweet green pepper, chopped
  • 2 garlic cloves, minced
  • 1 1/2 cups frozen corn
  • 1/4 cup rice
  • 6 cups low sodium chicken broth
  • 15 ounces low-sodium tomato sauce
  • 1/4 cup ketchup
  • 1 tablespoon dijon mustard
  • 3 -4 drops tabasco sauce
  • 1 teaspoon lemon juice
  • 2 teaspoons sugar
  • 2 teaspoons dried thyme
  • 2 teaspoons dried basil
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper

Recipe

  • 1 combine ingredients in a 6 quart slow cooker.
  • 2 cook on high for 1 hour.
  • 3 stir, reduce heat to low and cook 7 - 9 hours.
  • 4 remove chicken from the pot, cool slightly.
  • 5 chop chicken into bite-sized pieces; return to pot.
