Chicken With Plum Sauce

Ingredients
- Servings: 4
- 1/2 cup flour
- 1/2 cup cornstarch
- 2 teaspoons baking powder
- 1 teaspoon salt
- 2 eggs
- 1/2 cup milk
- 2 -3 lbs chicken, cut into bite size pieces (i use boneless skinless breasts)
- 1/2 cup crushed pineapple in juice
- 1/4 cup sugar
- 1/4 cup water
- 1/4 cup vinegar
- 3/4 teaspoon soy sauce
- 1/4 cup plum preserves or 1/4 cup plum jam
- 1 1/2 teaspoons cornstarch
- 1 1/2 teaspoons water
Recipe
- 1 mix the first 4 ingredients well. add eggs and milk. whisk together well to make batter. dip chicken pieces in batter and deep fry. drain on a pan lined with paper towels.
- 2 in a sauce pan, mix pineapple, sugar, water, vinegar and soy sauce. bring to a boil. mix corn starch and water together. add to the sauce pan. bring to a boil again. when thick, let cool for 15 minutes add plum preserves and mix well.
- 3 serve sauce over chicken or as dipping sauce.
