Chicken With Plum Sauce

Ingredients

  • Servings: 4
  • 1/2 cup flour
  • 1/2 cup cornstarch
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 eggs
  • 1/2 cup milk
  • 2 -3 lbs chicken, cut into bite size pieces (i use boneless skinless breasts)
  • 1/2 cup crushed pineapple in juice
  • 1/4 cup sugar
  • 1/4 cup water
  • 1/4 cup vinegar
  • 3/4 teaspoon soy sauce
  • 1/4 cup plum preserves or 1/4 cup plum jam
  • 1 1/2 teaspoons cornstarch
  • 1 1/2 teaspoons water

Recipe

  • 1 mix the first 4 ingredients well. add eggs and milk. whisk together well to make batter. dip chicken pieces in batter and deep fry. drain on a pan lined with paper towels.
  • 2 in a sauce pan, mix pineapple, sugar, water, vinegar and soy sauce. bring to a boil. mix corn starch and water together. add to the sauce pan. bring to a boil again. when thick, let cool for 15 minutes add plum preserves and mix well.
  • 3 serve sauce over chicken or as dipping sauce.
