Chicken With Red Onion Salsa

Total Time: 4 hrs 5 mins Preparation Time: 5 mins Cook Time: 4 hrs

Ingredients

  • 4 chicken breasts, rinsed and patted dry
  • 2 tablespoons mexican seasoning
  • 2 (10 ounce) cans ro-tel tomatoes
  • 1 (6 ounce) can tomato paste
  • 2 medium red onions, peeled and finely diced

Recipe

  • 1 season both sides of chicken breasts with mexican seasoning and set aside.
  • 2 in a medium bowl, stir together diced tomatoes, tomato paste, and onions.
  • 3 pour half of salsa mixture in the bottom of a 5-quart slow cooker; add chicken and top with remaining salsa mixture.
  • 4 cover and cook on low for 4 to 6 hours.
