Creole Chicken With Long Grain Brown Rice

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 1 tablespoon olive oil
  • 2 chicken breasts, sliced up
  • 24 ounces chopped tomatoes
  • 1 cup chicken broth
  • 1 green pepper
  • 2 onions
  • 3 garlic cloves
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 tablespoon chili powder
  • 1 teaspoon oregano
  • 2 teaspoons creole seasoning
  • 10 saffron threads
  • 2 cups long grain brown rice
  • 3 1/2 cups chicken broth

Recipe

  • 1 saute onions, garlic, and green pepper.
  • 2 add sliced up chicken.
  • 3 add tomatoes.
  • 4 add chicken broth and spices.
  • 5 simmer until liquid is reduced.
  • 6 while simmering, prepare rice using a pressure cooker.
