Easy Jambalaya

Ingredients

- 2 tablespoons butter
- 1 medium onion, chopped
- 1 cup bell pepper, chopped (green, yellow, red)
- 2 garlic cloves, minced
- 1 lb smoked sausage, cut into slices
- 1 cup rice
- 2 cups chicken broth
- 3 tablespoons tabasco brand green pepper sauce
- 1 (14 1/2 ounce) can diced tomatoes, drained
- cajun seasoning
Recipe
- 1 melt butter in large heavy saucepan over medium-high heat. add onion, bell peppers,garlic, and sausage. cook for 5 minutes or until vegetables are tender,stirring often.
- 2 stir in rice, chicken broth, tabasco sauce, tomatoes, and cajun seasoning to taste. mix well and bring to a boil.
- 3 reduce heat, cover, and simmer 25 minutes or until rice is tender.
- 4 remove from heat and let stand 5 minutes longer before fluffing with a fork.
