Easy Lemon Chicken

Ingredients

  • Servings: 5
  • 4 -5 boneless skinless chicken breasts
  • 2 tablespoons butter
  • 2 tablespoons extra virgin olive oil
  • 3 tablespoons flour
  • 2 cups chicken broth
  • 2 lemons, juice of
  • salt and pepper (to taste)

Recipe

  • 1 dredge chicken in flour.
  • 2 in medium skillet, melt butter and oil until it sizzles.
  • 3 saute chicken until cooked through.
  • 4 remove chicken and set aside.
  • 5 add lemon juice to chicken stock and whisk into skillet.
  • 6 whisk in flour and cook until mixture boils.
  • 7 reduce heat to a simmer and return chicken to skillet to heat through.
  • 8 cook until sauce is desired consistency.
  • 9 add salt and pepper to taste.
  • 10 serve.
